If you have a candy thermometer, aim for the syrup to reach the “soft ball stage,” which is around 240°F (115°C). If you don’t have a thermometer, you can check by dropping a small amount of syrup into cold water. It should form a soft ball when rolled between your fingers.
- Once the syrup reaches the desired stage, add the roasted millet flour, cardamom powder, and a pinch of salt (if using). Mix everything well to combine.
- Add the roasted nuts and mix them into the mixture.
- Allow the mixture to cool slightly, so it’s safe to handle. When it’s still warm but not too hot, start shaping the mixture into small laddu (ball) shapes using your hands. If it’s too hot to handle, you can apply a little ghee on your palms to prevent sticking.
- Continue shaping the laddus with the entire mixture.
- Let the millet laddus cool completely before storing them in an airtight container.
